Turkey Meatballs

These are always a hit and so easy to make! 

Turkey Meatballs

Ingredients:
1 1/2 lbs lean ground turkey or chicken.
1/2 cup finely chopped onion
1 egg lightly beaten
1 cup oat bran or wholewheat breadcrumbs
2 tbsp fresh parsely, finely chopped
2 tbsp fresh basil, finely chopped
2 tbsp fresh oregano finely chopped
2 cloves garlic, passed through a garlic press
1 tsp sea salt
1 tsp freshly ground black pepper

Preparation
Preheat oven to 400 degrees.
In a large bowl place egg and breadcrumbs or oat bran.
Add spices and mix well. Add remaining ingredients
and mix well. Using an ice cream scoop make meatballs
and place on prepared cookie sheet. Place in hot oven 
and bake for 20 minutes or until golden.

Working Out!

I know after having each one of my kids starting back to exercising what torturous...no really, it was awful. My youngest is now 3.5 years old and it has just been within the last 3 months that I have consistently and regularly exercised 6 days a week. What made me finally do it? I think I finally stopped going "all in" to start. It was too much to expect of myself. I didn't make it attainable. What do I mean by that? Exercising is not easy, especially when you are out of shape! I had to work my way back into it. It's the same if you are just starting out. You might need to workout every other day or every few days or just for a few minutes at a time and build up to it. Also, start with exercise that you CAN do! Here is a great one anyone can do: 

                           Walk, walk, walk! --It's easy, free and effective!

So get out there and get moving! What exercise are you going to do???

Shakerock Shake

When I saw someone post this a few weeks ago, I was super excited. I can't tell you how many Shamrock Shakes I have had in my day....too many to count. You could also ask my mom about the number of times that she took me to get one. Here is a nice, healthy version that tastes the same. You can't beat that!!

Greenberry Shakeology
2 Tbsp PB2
1/8 tsp Mint Extract 
2Tbsp SF/FF Cheesecake Pudding Mix
Ice and Water to taste

Butternut Squash Applesauce

Butternut Squash Applesauce

Do you ever try to trick your kids into eating something healthy? Oh, me either!! This is something so easy and delicious!

Ingredients:
5-6 apples sliced and cut up (I leave the skin on, but you could peel it off)
2c. cubed butternut squash
1c. water
Cinnamon to taste


Put all ingredients in the crockpot and cook on High for about 4 hours. I usually "mush" up the apples and squash throughout the cooking.

Chicken with peppers and tomatoes
I have found that starting off simple has been successful for me. Here is a recipe that I make all the time. We have had family over that raved about it too!

Chicken With Peppers and Tomatoes  ( I know...fancy name!)

1.5 lbs. chicken breast cut into slices
1 c. of chersry tomatoes cut in half
2 c. variety of sweet peppers cut into slices
2-3 T. of olive oil
2 T. Fajita Seasoning ( I use Wildtree seasonings, but you could use whatever seasonings)

Cut all ingredients. Place all ingredients in a skillet over medium-high heat. Cook thoroughly and VOILA that is all there is too it.
